I’m here to share a secret. A secret recipe that is.
In my latest release, Recipe for Seduction, my hero is shocked to find my heroine's fridge completely bare except for cream cheese and carrots. Like any good chef, what comes to mind when thinking of cream cheese and carrots?? Carrot cake, of course.
The carrot cake in Recipe for Seduction is inspired by my grandmother. Her carrot cake is famous. Well, at least within my family and in certain circles at my workplace. ☺
It’s yummy and light and let’s face it, anything is good when smothered in cream cheese icing.
So here it is. There recipe for Grandma Gordon’s Famous Carrot Cake. Enjoy!
|From the carrot cake scene... now I'm hungry... ☺|
2 cups flour
2 cups sugar
1teaspon baking soda
I teaspoon baking powder
Pinch of salt
1 ½ teaspoon cinnamon
1 ½ cup of vegetable oil
2 cups carrot (shredded)
½ cup chopped walnuts (optional)
Cream Cheese Icing:
1 package of cream cheese- softened
¼ cup of butter, melted
1 teaspoon of vanilla extract
2 cups icing sugar
1. Heat oven to 350 degrees.
2. Whisk eggs and oil in a bowl until blended. Gradually beat in sugar until well blended.
3. Add dry ingredients (flour, baking soda, baking powder, salt, and cinnamon) and carrots and mix well.
4. Pour into a greased pan and bake 50 minutes or until toothpick inserted into the center comes out clean.
5. Beat cream cheese, vanilla, and butter in a bowl with a mixer until well blended.
6. Gradually beat in icing sugar and mix until blended.
7. Spread icing onto cooled cake.
8. Sprinkle chopped walnuts over the icing.
