One of my favorite parts of Christmas is going
to my Nona’s house on Christmas Eve for an extravaganza of fish and seafood.
And when I say extravaganza, I mean an 8-foot table full of so much food that
there is hardly any room to put your dinner plate.
One of my favorite things to eat is my dad’s
famous shrimp with breadcrumbs. It’s so simple and so delicious. Of course,
when making it, he always ends up with oil splattered all over his dress shirt.

Since dad would probably tell me the recipe is
“just cook the shrimp and breadcrumbs together and add lemon”, I thought I
would supply you with a real recipe, or at least a play on a recipe I found
from the Diners, Drive-ins, and Dives guru, Guy Fieri.
While I don’t know if they will be as good as
dad’s…..they look pretty damn good and I will be trying the recipe!
Shrimp With Breadcrumbs
Ingredients:
4
tablespoons Extra Virgin Olive Oil
4 tablespoons butter
2 cups breadcrumbs (fresh breadcrumbs are best)
8 large cloves of garlic, finely minced
1 pound uncooked, peeled , deveined shrimp (any size you like)
⅓ cup fresh Italian parsley, chopped
Finely grated zest of 1 large lemon
Juice of lemon
4 tablespoons butter
2 cups breadcrumbs (fresh breadcrumbs are best)
8 large cloves of garlic, finely minced
1 pound uncooked, peeled , deveined shrimp (any size you like)
⅓ cup fresh Italian parsley, chopped
Finely grated zest of 1 large lemon
Juice of lemon
Directions:
1. Heat 4 tbsp olive oil and 2 tbsp butter in a large
non stick skillet over medium heat. Add the breadcrumbs and half the minced
garlic. Saute until the crumbs are golden and crisp (8-10 minutes). Transfer to
a bowl and set aside.
2. Heat the remaining oil and butter in the same skillet
over medium high heat and add the shrimps (seasoned with salt and pepper) and
the rest of the garlic. Sauté until the shrimp are opaque in the middle (3-4
minutes).
4. Stir in the parsley, all the lemon zest and juice and
the breadcrumb mix.
5. Toss and taste for seasonings.
This real recipe actually includes pasta, so you may want to tweak the
